On the way home I discovered the amazing Stampede Saloon and Eatery in Chugwater... and I would return there.
Despite passing Chugwater dozens of times over the decades on I-25 (54 mi north of the Colorado border), stopping at the rest area, driving through town, and even rockhounding for opal moss agate a few miles away, I'd never tried their famous Chugwater chili. Which it turns out was mostly a national brand of spice you can order... But I wanted to actually sit down and eat a bowl of it at the source. I found the Stampede online as a location. Great food and service, under $13 (plus tip) for chili and a good side of coleslaw.
